Every afternoon in our All Day Montessori program, our kids love to spend time preparing food together. As we enter the Fall season, pumpkins are back to the menu, and the buzz around Halloween spreads as the kids get excited to celebrate the season.
We've been baking pumpkin muffins together in our classroom. This easy to prepare recipe is a great way to spend time cooking with your child at home and learn about spices like vanilla, cinnamon, nutmeg, ginger, and cloves.
Ingredients 1/3 cup oil 1/2 cup honey 1 cup pumpkin puree 2 eggs 1/4 cup milk 1 teaspoon vanilla 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon ginger 1/4 teaspoon cloves 1 3/4 cup flour
Instructions Beat oil and honey with a whisk in large bowl. Add eggs, beat well Add pumpkin, milk, baking soda, vanilla, salt, cinnamon, ginger, nutmeg, and cloves Add flour to the bowl and mix until just combined Preheat oven to 325 degrees F Grease your muffin pan Divide batter among muffin cups Bake 23-26 minutes Let cool for 5-10 minutes, then enjoy!
